Easy Holiday Cupcakes

I love baking with the boys around the holidays.

I’m always looking for easy, tasty, and fun recipes to make.

A few friends reccomended this recipe, and it has only TWO ingredients. I was slightly skeptical at first. Two ingredients sounded a little weird, but I made the cupcakes and they turned out AH-MAZING!!!!

Not only is this recipe tasty, it’s also cheap. I bought both ingredients for $3, and it makes 12 very large cupcakes.


1 box of Devil’s Food cake mix

1 15 oz can pure pumpkin

That’s it! Yes, biatches. That’s it. No butter, oil, eggs, water, milk, Crisco….nothing else. And since it doesn’t use any of this good stuff, it is supposed to be really low in fat, calories, etc. I don’t really care about that crap, but I know some of you do. A similar recipe is even popular with the Weight Watchers community using a low fat Devil’s Food cake mix.


Pour the cake mix and pumpkin puree in a bowl. Mix. The hardest part of the whole process is the stirring. I didn’t use an electric mixer, I did it by hand bc I was being lazy didn’t wanna overbeat the pumpkin. It takes a little bit of muscle because once the ingredients start to blend it gets a little gooey and thick like fudge kind of. After they’re mixed just drop equal spoonfuls into cupcake holders (I use the silicone ones). The mixture won’t be smooth like regular cupcakes. Just drop it in there all lumpy and thick. It really cooks up nicely with uneven peaks. Put in a 375 degree oven for about 20 minutes (just keep checking til they look “done”).

Super easy. And if you don’t like the taste of pumpkin, don’t worry….they take absolutely NOTHING like pumpkin. For some reason, the pumpkin puree just makes them super moist and soft. I’m not a big chocolate desserts fan, so I was wondering if this recipe would work with a box of yellow cake. If anyone knows, please fill me in on your thoughts.
